Chef Ross Magnaye is teaming up once again with Chef Yudha Permana for a night of bold, flame-kissed flavours - headlined by his legendary Tacos Sisig, the dish that Gordon Ramsay himself declared “the best dish I’ve tasted in years.”

 

A Filipino-Australian chef with a rebellious streak, Ross is the mastermind behind Melbourne’s award-winning Serai, where he’s been making waves with his fearless take on Filipino flavours. His open-flame cooking has earned him international acclaim, and after last year’s sold-out takeover, he’s bringing the heat back to Bali for a one night only Uluwatu special.

 

The infamous Tacos Sisig - praised by one of the world’s toughest food critics - will be the star of the night, alongside a flame-driven menu that fuses Ross’ signature flair with local Balinese ingredients and YUKI’s unmistakable style.

Every ingredient used is of the highest quality, most of which is locally and sustainably sourced from Bali’s bountiful farmers and fishermen. Chef Yudha takes these high quality ingredients and forges his dishes over a wood fire or charcoal grill, while Chef Kadek experiments with texture and native Japanese flavours through his expertise in Japanese cuisine to create crowd favourites, including plant based options for vegans and vegetarians.
